Meal planning is something most people struggle with. And it’s for one main reason – TIME!
Meal planning has truly transformed my week and keeps me on track and less stressed when it comes to mealtime.
There is 1 thing I do weekly to make sure that time isn’t the source of why meal planning doesn’t happen. I’ve never talked about it before!

✨ Turning one protein into multiple meals ✨
Let’s start with Rotisserie Chicken
Rotisserie chicken is SO VERSATILE! Fully cooked and ready to eat, plus it’s easy to grab and save for multiple days, which is exactly what I do!
Whether you like a salad, soup, or casserole, or just want to eat chicken – rotisserie chicken is a great option! Not only that but it’s easy to flavor and goes well with a variety of seasonings and sauces.
Here are 3 meals I create with Rotisserie Chicken:
- Salsa Verde Enchiladas – This can be made and saved for leftovers or frozen for a future date as well
- Chicken Soup (Noodle or Tortilla) – a comforting meal that the whole family will love
- Chicken Salad – super quick & easy for a healthy, filling lunch
Rotisserie chicken is high in protein, low in fat, and my personal favorite when it comes to meal planning and prepping!
Another great option for a protein that creates multiple meals is ground turkey.
Ground turkey has a mild flavor so you can customize and season it to your liking for whatever meal you make. It works great in a variety of meals and is perfect for meal prepping!
It’s a lean protein source and lower in fat compared to beef. It’s packed with health benefits and a fantastic choice for your next nutritious meal.
Here are 3 meals I create with ground turkey:
- Ground Turkey Burrito Bowls – these are a tasty customizable option where you can add your favorite seasonings and toppings
- Stir Fry with Ground Turkey, Rice, and Veggies – if you’ve got the ground turkey prepped and on hand, this is a quick throw-together meal that packs the nutrients.
- Paste with Ground Turkey and Sauce – a family favorite that takes the stress out of dinner
My recommendation to you is to batch cook and prep these ingredients ahead of time. This will significantly save on the time it takes to prepare your meals all week long!
