Drive-Thru Isn’t the Only Option: 5 Quick & Healthy Dinners

You’re busy, you’re tired, and the drive-thru seems like the only option… but what if I told you that you can have a healthy, homemade meal ready just as fast – without the stress? You need quick & healthy dinners!

It’s not a dream, you can actually do this! Eating well doesn’t have to be time-consuming or complicated. I’m going to share 5 easy, healthy dinners that you can prep in minutes and have ready when you need them. 

The biggest meal planning mistake

The truth is, it’s not a time issue you are facing, it’s a planning issue. But don’t worry, you don’t have to live with this problem. I’m going to suggest a style of meal that will keep the preparation time low so you can cook a healthy meal no matter how short on time you are. I like to call these set-it-and-forget-it meals. These are crock pot and sheet plan meals. I promise they will be your best friend.

5 quick & healthy dinners

  1. Crock pot salsa chicken bowls

Here’s what to do: chicken thighs + salsa + taco seasoning (in the crock pot on low until chicken is cooked 8 hours or high for about 5) → shred and serve over rice or greens. Then, get your avocado, greek yogurt, and shredded cheese and you’re all set. A healthy, delicious meal ready to go QUICKLY!

  1. Gluten-free pasta with sauce

Grab your favorite gluten-free pasta and a bottle of sauce and you’ve got yourself an easy meal everyone will love. Bonus, if you can add protein (ground beef or chicken are my family’s favorites). 

  1. Crockpot turkey & veggie chili

Ground turkey + diced tomatoes + black beans + bell peppers + chili seasoning is what you’ll need. Throw it all together in the crockpot for 6-8 hours and you’re good to go! I like to set this one up before work and forget about it until dinner time. Once ready, add some avocado and you’ve got a family friendly, healthy meal. 

  1. Sheet pan sausage & roasted veggies

This sheet pan meal is one you will want to make over and over. You’ll need nitrate-free chicken sausage + sweet potatoes + brussel sprouts + onions. Toss the veggies in olive oil and seasonings and add to your pan. Then add the chicken sausage and roast at 400 degrees for 25 minutes. Quick, delicious, and you can even prep this for future days. 

  1. 30-minute ground beef & rice stir-fry

All you need is 30 minutes and a handful of ingredients for this quick, high-protein, low-carb option in one pan. Grab your pan and brown some ground beef. Then add bell peppers + coconut aminos and cook til done. Cook your cauliflower rice and then top with your beef and vegetable toppings. 

Making healthy eating work for you

Not sure how to make this easy? Plan ahead. Add ingredients you need for these meals to your weekly grocery list so you don’t forget. Batch prep. Chop your veggies and portion your protein ahead of time for even faster meals. Keep it simple.

Remember, healthy eating doesn’t have to be complicated!
